This lambic is very distinctive as it is infused with green unripe walnuts. The walnuts are included during the maturation of the beer in oak casks, and they contribute a bitterness that is in good balance with the natural acidity that has arisen during fermentation. This makes the flavor profile of this lambic quite unique, as they rarely have any particular bitterness otherwise.
